BUTTERMILK PANCAKES

Ingredients:
3 egg whites
1-1/2 cups buttermilk
1/2 teaspoon salt
1 teaspoon baking soda
2 cups flour
vegetable oil cooking spray
Cooking Instructions:
In a large bowl, beat the egg whites until they start to get bubbly. Mix in the remaining ingredients, one at a time. Blend well after each addition. With a large spoon, pour the batter into a hot nonstick skillet that has been sprayed with vegetable oil cooking spray. Flip when the bottoms start to brown. Serve immediately. Since there is no oil in this recipe, don't overcook or they will get tough. Do not try this batter in your waffle maker. The batter stays moist and makes limp waffles. Variation: Immediately after you have put the batter in the hot skillet, drop in some slices of fresh fruit. Bananas, strawberries, blueberries and apples are recommended.
