1 cup fine gingersnap crumbs or graham cracker crumbs 3 Tablespoons margarine melted 2 8 ounce packages Philadelphia cream cheese softened 1 cup mashed cooked sweet potato 1/3 cup sugar 1 1/2 teaspoons pumpkin pie spice 1 teaspoon finely shredded orange peel 1 teaspoon vanilla 5 egg whites 1 cup evaporated skim milk frozen whipped dessert topping gingersnaps halved finelt chopped orange peel

| Cooking Instructions: |
For the crust, combine gingersnap or graham wafere crumbs and the margarine. Press crumb mixture onto the bottom and 1 inch up the sides of a 8 inch spring form pan. Set aside.
For filling in a large mixer bowl combine cheese, sweet potato, sugar and pumpkin pie spice, the 1 teaspoon orange peel and the vanilla. Beat with an electric mixer on mediom speed until
combined. Add egg whites beating on low speed til combined. Do not overbeat. Stir in milk. Carefully pour mixture into prepared pan.
Bake in a 350 degree oven for 60 to 70 minutes or until the center is set. Cool on a wire rack for 45 minutes. Cover and chill thoroughly. Remove sides of pan. Dollop top with frozen whipped topping. Garnish with gingersnap halves and addional orange peel.
