3/4 cup all-purpose flour 1 teaspoon salt 3/4 cup buttermilk 2 eggs 2 cups crushed corn flakes 1/2 cup finely grated parmesan cheese 3 to 4 pounds skinless bone-in chicken breasts 2 tablespoons melted butter

| Preheat oven to 375F. Lightly coat a 9 X 12 X 2-inch glass baking dish with non-stick cooking spray; set aside. Combine flour and salt together in a medium-size bowl. Place buttermilk and eggs; crushed corn flakes and parmesan cheese in 2 separate shallow bowls. Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and egg mixture then in crushed corn flakes and parmesan cheese mixture. Place coated chicken breasts in prepared baking dish. Drizzle chicken with melted butter. Check oven temperature with oven thermometer for correct baking temperature. Bake until chicken is tender and no longer pink, about 1 hour (there is no need to turn the chicken during baking). Insert meat thermometer into chicken breast and make sure temperature is 160 degrees F. Keep warm until serving before the ball game. Yum! Yum! Yields 1 breast per serving.
