Ingredients:
1 cup rolled oats
1 cup wholemeal plain flour
1/4 cup sugar
1/4 cup brown sugar
1/3 cup coconut
1/3 cup unsalted peanuts
125 gm (4 ounces) butter
3 tablespoons corn syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water
Cooking Instructions:
Heat oven to 300 degrees F. Combine first six ingredients in a bowl. Melt butter and corn syrup together in a small pan over low heat. Place the soda into a small bowl. Pour the boiling water on it and immediately add the bubbling mixture to the golden syrup mixture. Pour this into the dry ingredients and mix well. Place small spoonfuls onto baking tray. Bake for 15 - 20 minutes.
